Brazilian Cheese Bread

INGREDIENTS
- 1 cup milk
- 2 tbsp butter
- 2 tbsp neutral oil
- 3 cups tapioca flour
- 1 tsp salt
- 2 beaten eggs
- 1.5 cups of grated cheese ( 3/4 of Parmesan and 3/4 of mozzarella)
INSTRUCTIONS
- Preheat oven to 400ºF.
- Heat milk, butter, and oil to a boil in a pot.
- Combine tapioca flour and salt in a mixer bowl.
- Add hot milk to flour, mix until smooth. The dough will be sticky.
- When cool, add eggs one by one, then cheese. ( Optional: Chill if too soft.)
- Line sheets with parchment. Scoop tablespoon-sized dough balls, an inch apart.
Sprinkle a little bit of Parmesan before baking on each piece.
Bake 20 minutes until golden and puffed.
