This crispy dumpling salad is a fresh, flavor-packed twist on a weeknight salad that transforms something ordinary into something absolutely crave-worthy! Instead of boring croutons, golden air-fried dumplings add that perfect crunch, savory depth, and spicy kick to every bite. The dumplings get air-fried until crispy and golden, then tossed in an incredible chili-soy vinaigrette made with soy sauce, seasoned rice vinegar, chili crisp, sesame oil, sugar, fresh ginger, and minced garlic. This dressing is the star of the show—it's tangy, spicy, savory, and slightly sweet all at once, creating layers of bold flavor that make you want to eat every bite. The salad base is fresh and light: crisp mixed greens, juicy cherry tomatoes halved for easy bites, cool cucumber slices that add refreshing crunch, bright scallions for mild onion flavor, and fresh cilantro for herbaceous brightness. The contrast between the warm, saucy, crispy dumplings and the cool, fresh vegetables is absolutely perfect. Every forkful has creamy dumpling filling, crispy exterior, tangy-spicy dressing coating, fresh vegetables, and that satisfying crunch. The white sesame seeds sprinkled on top add nutty flavor and visual appeal. This salad is quick and easy—just 20 minutes from start to table—and incredibly versatile. Use whatever dumplings you love (veggie, chicken, pork, shrimp), customize the vegetables based on what you have, and adjust the spice level to your preference. Perfect for a satisfying weeknight dinner, lunch prep, or serving family-style at a gathering!

Q: Can I use fresh dumplings instead of frozen?

A: Yes! Fresh dumplings work wonderfully and may cook slightly faster. If pan-frying fresh dumplings on the stovetop instead of air frying, cook over medium heat until the bottoms are golden, then add a splash of water and cover to steam until the dumplings are cooked through, about 5-7 minutes total. Then toss in the dressing right before serving!

Q: Can I bake the dumplings instead of air frying?

A: You can substitute with chili oil, sriracha, hot sauce, or even crushed red pepper flakes mixed with a little oil. The chili crisp adds amazing texture and flavor, but other spicy condiments work. Adjust the amount based on how spicy you like it!

Q: What if I don't have chili crisp?

A: You can substitute with chili oil, sriracha, hot sauce, or even crushed red pepper flakes mixed with a little oil. The chili crisp adds amazing texture and flavor, but other spicy condiments work. Adjust the amount based on how spicy you like it!

Ingredients

Ingredients

For the Dumplings:

  • 1 (24-ounce) package frozen mini dumplings (veggie, chicken, pork, or your favorite variety)
  • Cooking spray

For the Chili-Soy Vinaigrette:

  • 2 tablespoons soy sauce
  • 2 tablespoons seasoned rice vinegar or apple cider vinegar
  • 2 tablespoons chili crisp or chili oil
  • 1 tablespoon sesame oil
  • 1 teaspoon granulated sugar
  • 1 teaspoon fresh ginger, grated
  • 1 garlic clove, minced

For the Salad:

  • 3 cups mixed salad greens
  • 2 cups cherry tomatoes (1 pint), halved
  • 1 cucumber, peeled and thinly sliced
  • 2 scallions, thinly sliced
  • 1 small fresh cilantro bunch, chopped (about ¼ cup)
  • 1 tablespoon white sesame seeds

Instructions

  1. Preheat the Air Fryer Preheat your air fryer to 375°F (190°C) for about 3-5 minutes.
  2. Prepare the Dumplings Place the frozen mini dumplings in a bowl. Lightly coat them with cooking spray, using just enough to create a light sheen on the surface. You want them lightly oiled, not drenched. Toss gently to distribute the spray evenly.
  3. Air Fry the Dumplings Arrange the coated dumplings in the air fryer basket in a single layer, making sure they're not overcrowded. Air fry at 375°F for 8-10 minutes until golden and crispy. Shake the basket gently halfway through the cooking time (around the 4-5 minute mark) to ensure even cooking on all sides. The dumplings should be golden brown and crispy when done.
  4. Make the Vinaigrette While the dumplings cook, prepare the chili-soy vinaigrette. In a small bowl, whisk together the soy sauce, seasoned rice vinegar, chili crisp, sesame oil, sugar, grated fresh ginger, and minced garlic. Whisk until the sugar is dissolved and the dressing is well combined. Taste and adjust seasonings if needed—add more soy sauce for saltiness, more vinegar for tang, or more chili crisp for heat.
  5. Build the Salad In a large bowl, gently toss together the mixed salad greens, halved cherry tomatoes, thinly sliced cucumber, thinly sliced scallions, and chopped fresh cilantro. Don't dress it yet—you want the vegetables to stay crisp!
  6. Coat the Dumplings Remove the crispy dumplings from the air fryer and let them cool for just 1 minute. Transfer them to a large zip-top plastic bag or a bowl. Pour the chili-soy vinaigrette over the warm dumplings. Seal the bag and shake vigorously, or use tongs to toss the dumplings in the bowl, until every dumpling is evenly coated in the saucy dressing.
  7. Assemble and Serve Arrange the dressed salad on a large platter or divide among 4 serving bowls. Top with the saucy, crispy dumplings, distributing them evenly. Sprinkle with white sesame seeds for a finishing touch. Serve immediately while the dumplings are still warm and crispy, and the salad is still fresh and cold. The contrast between warm and cold is part of what makes this salad so delicious!

Cooking hacks and tips

  • Don't skip the coating spray on the dumplings: A light coating of cooking spray ensures the dumplings get crispy and golden in the air fryer. Without it, they'll just steam and won't develop that desirable crispy exterior. Use just enough to coat, not drench!
  • Shake the basket halfway through cooking: This ensures even crisping on all sides of the dumplings. They tend to stick to the bottom of the basket slightly, so the shake redistributes them for uniform browning and crispiness.
  • Toss the dumplings in the dressing while still warm: Warm dumplings absorb the dressing better than cold ones, and the warmth helps the flavors meld together. The heat also slightly softens the exterior while it stays crispy, creating the perfect texture!
  • Keep the salad vegetables separate until serving: If you dress the salad base ahead of time, it will get soggy and lose its crispness. Keep the greens, vegetables, and dressing separate until the moment you're ready to serve. This keeps everything fresh and crunchy!
  • Customize with your favorite dumplings: This recipe works with any dumpling variety—vegetable, chicken, pork, shrimp, or even wontons. Pick your favorite or use what you have on hand. Different fillings will pair beautifully with the chili-soy dressing!
