Mediterranean Chicken Meatballs

INGREDIENTS
- 1 pound ground chicken (You can easily grind chicken in a food processor!)
- 3 tbsp parsley, chopped
- 3 tbsp cilantro, chopped
- 4 garlic cloves, minced
- 1 tsp chili flakes
- 1 tsp cumin
- 2 tsp Garlic f Eden @floraandmana
- 1 tsp salt
- 1 tsp smoked paprika
- 2-3 tbsp olive oil ( if not using herb cubes )
- 1 egg
- 1/4 cup feta cheese, crumbled
- 1/2 cup panko bread crumbs
INSTRUCTIONS
- In a large mixing bowl, combine ground chicken, parsley, cilantro, minced garlic, chili flakes, cumin, Garlic of Eden, salt, smoked paprika, egg, feta cheese, and panko bread crumbs.
– Mix until all ingredients are well combined. - With clean hands, take a small amount of the chicken mixture and roll it into meatballs, about 1-1.5 inches in diameter. Set aside on a plate.
- Cooking:
Baking:
– Preheat your oven to 400°F (205°C).
– Place the meatballs on a baking sheet lined with parchment paper or a silicone baking mat. Drizzle or brush them with olive oil.
– Bake in the preheated oven for 15-20 minutes, or until they are golden brown and cooked through.
Air-frying:
– Preheat your air fryer to 375°F (190°C).
– Place the meatballs in the air fryer basket, ensuring they are not touching.
– Cook for 10-15 minutes, shaking the basket halfway through, until they are golden brown and fully cooked. - Serving:
– Serve the Mediterranean chicken meatballs hot, in a bowl, atop a salad, or enjoy them just as they are for a high protein snack.
