Chicken Shawarma Wrap

INGREDIENTS
- 2 lbs of boneless, skinless chicken thighs (cut in bite sized pieces)
- 6 cloves garlic chopped
- 6 whole wheat pita breads
Marinate
- 3 tbsp olive oil
- 1/4 cup apple cider vinegar
- 1 lemon juiced
- 2 tbsp tomato paste
- 2 tsp garlic powder
- 1 tsp onion
- 1 ½ tsp cumin
- 1 tsp allspice
- 1 tbsp smoked paprika
- 1/2 tsp clove
- 1/4 tsp cayenne pepper
- 1 tsp turmeric
- 1 tsp cardamom
- 1 Tbsp sugar
- 1.5 tsp kosher salt
Toppings
- 1 tomato sliced
- Pickled turnips
- Red onions or sumac onions
- Pickled cucumber
- Green leaf lettuce
- Garlic sauce ( Toum )
- Garlic hot sauce on side
INSTRUCTIONS
Marinate chicken in spice mixture for 1-2 hours in the refrigerator. When ready to cook, heat up olive oil in a pan and add garlic, cook 1-2 mins. Add marinated chicken and cook for about 15-20 mins till the sauce has thickened and darkened up. Now, all you have to do is assemble the shawarma with the fixing of your choice! Enjoy with a side of hot sauce and garlic sauce.
