Step 2. Make Sauce: Add remaining olive oil to the same skillet. Cook cherry tomatoes until they burst and char, about 10 minutes. Stir in onions, garlic, lemon zest, thyme, paprika, salt, and pepper.
Step 3. Finish: Return salmon to the skillet. Spoon sauce over and simmer for 5-6 minutes. Squeeze lemon juice on top and garnish with thyme.

One Pan Seared Salmon with Cherry Tomatoes
Ingredients:
- 3 salmon fillets
- 2 tbsp Extra Virgin Olive Oil @Pompeian
- ½ pint yellow cherry tomatoes
- ½ pint red cherry tomatoes
- ½ cup red onions, sliced
- 2 garlic cloves, sliced
- 2 tsp smoked paprika
- 1 sprig thyme, plus extra for garnish
- Zest of ½ lemon
- Juice of 1 lemon
- Salt & pepper, to taste
- Optional: Sliced jalapeno
