  • 2 bunches fresh cilantro (with stems), washed
  • 1 bunch fresh flat-leaf parsley, washed
  • 2 serrano peppers, with seeds
  • 2 jalapeño peppers, with seeds
  • 6 garlic cloves
  • 2 tablespoons rice vinegar
  • 1.5 tablespoons Dijon mustard
  • 1.5 tablespoons spicy mustard
  • Juice of 2 fresh limes (about 1/4 cup)
  • Juice of 1 fresh lemon (about 3 tablespoons)
  • Juice of 1 fresh orange (about 1/4 cup)
  • 3/4 cup olive oil
  • 2 tablespoons honey
  • 1/2 tablespoon salt (adjust to taste)
  • Black pepper to taste

Instructions

  1. Prep the Ingredients
    Wash and roughly chop the cilantro (including stems) and flat-leaf parsley. Keep the serrano and jalapeño peppers whole with seeds unless you prefer less heat. Peel and roughly chop the garlic cloves.
  2. Add to Food Processor
    In a food processor, combine the cilantro, parsley, serrano peppers, jalapeño peppers, garlic cloves, rice vinegar, Dijon mustard, spicy mustard, lime juice, lemon juice, orange juice, honey, salt, and black pepper. Do not add the olive oil yet.
  3. Pulse Until Combined
    Pulse the mixture several times until the herbs and peppers are broken down and roughly combined. The mixture should be relatively smooth but you'll still see flecks of herbs and peppers.
  4. Emulsify with Olive Oil
    With the food processor running, slowly drizzle in the olive oil in a thin stream. This is the key to creating an emulsified, silky sauce. Continue blending as you add the oil until the mixture is completely smooth and well combined. This should take about 1-2 minutes of blending while drizzling.
  5. Taste and Adjust
    Taste the sauce carefully. Adjust the heat level by adding more serrano or jalapeño peppers if you want more spice. Adjust the salt and pepper to your preference. If it needs more brightness, add a squeeze more lemon or lime juice.
  6. Transfer and Store
